Skype

Skype is such a cool thing. For Christmas we gave my dad and Donna a web cam, and this weekend we skyped with them for the first time. Lauren was in rare (silly) form and I think it was really fun for them to see her like that. It is such a neat thing, it truly feels like you are sitting in the same room with them. The best part is that I have Skype on my laptop so I can follow her around the house- they got to watch her sitting on the potty, and doing somersaults and riding her horsey. We were talking how it is like something out of the Jetson's cartoon- the video phone. Love it! If anyone else uses skype and wants to hook up, let me know and I will send you our Skype name. :)

Shock and Utter Disbelief







Jeff went up to WP today to see how things looked and assess the damages. He could barely talk when he saw it. I thought he was likely just in shock and it couldnt be that bad. I was wrong. Here are a few pictures he took. Lauren's potty seat in the filthy tub says it all.

Photographic Awesomeness delayed again

Yes, delayed again. This time for unknown reasons. The teacher just wasn't there and the man at the photography studio didn't seem to remember there was a class. The other women in my class stood patiently in his office with me as we saw him riffle through papers and try to figure out what was going on. Disappointment!! The funny part- he asks us all (again) if we would be interested in working for him for a few hours per week as an office manager to help him get organized. As much as I hate clutter and chaos and would like to help this old man out, I don't think so. I politely say "no, I am much too busy with my toddler" (and full time job as a pharmacist, I am thinking). The woman next to me says "you cannot afford me, I charge $100 per hour". HA HA HA!! She is a self-employed consultant and does computer programing work.  I love that she laid it out like that, he was looking at a group of professional women and kept asking us to do his filing assuming that we would love the extra cash, LOL.

Anyway, my camera class is still in limbo. Not sure what will happen, but I will be looking for a refund if the class does not get figured out soon. Continue to stay tuned for the awesomeness..... I am trying to figure it out myself, but there are so many settings and functions- I need help!!

The Flood

Friday night we got a call from the building manager at our Winter Park home~ the water pipes burst in a unit above us and our place is flooded. We are slowing receiving information by phone, but so far the carpet was pulled up & the pad lost. The water was running through the ceiling and that needs to be replaced. We are waiting to hear if the walls need to be tore out. We haven't been up there yet, we've been dealing with a sick child at home. Jeff plans to go on Sunday and take pictures and assess the damages. We are sad, our mountain retreat is trashed for the moment. Wishing it wouldn't have happened during ski season :(

Banana Faces

An attempt to make a cute snack that Lauren could not resist. While she was napping I drew smiley faces onto bananas using sunflower seed butter and a tooth pick. This was a difficult process, but would have been well worth it to get Lauren to eat. (She doesn't really eat anymore and isn't really growing, so we are putting forth effort). In the end, she thought they were cute but refused to try them. STINKER!!

Egg-free French Toast

Hooray!! I made an amazing discovery this week. I ran across this recipe for french toast using flax seed in place of the eggs. No way!! The thought had crossed my mind, but I was fairly certain that it would not work out so I never tried it. Jamie is a fellow blogging mommy of boys with allergies, and I have found lots of good ideas on her blog, but this one takes the cake, Thanks Jamie!!
The recipe is pretty simple:
Mix 1 Tbsp flax seed (milled) with 3 Tbsp water and let it sit until it jells up- this equals one egg. I made the equivalent of 2 eggs and added a bit of vanilla soy milk and some cinnamon.  Lauren had fun dipping the bread and dropping it in the pan, and then we cut it into strips and dipped it in maple syrup. Amazing- it tasted almost exactly like regular french toast. She gobbled it right up, I think I am going to make it again this weekend so that Jeff can try it.

Croup

Yep, we have made it through this winter nearly unscathed by respiratory viruses until now. The scarriest sounding one of all~ Croup. The little princess sounds like a seal from the zoo, and puked blueberries all over her bed last night from coughing so hard. This morning the wheezing continued for several hours after she got up, and wouldn't stop from steam or going outside in the cold (the cold thing made me feel super mean, btw). So off to the pediatrian's office we went, and now Lauren is on the 'roids.  So much for our Super Bowl party plans for tomorrow, guess we are holed up in the house with our little germ-riddled child.  I am hoping for a quick recovery, she sure doesn't feel well today.

Brrrr...

It is COLD in Denver today!! It was around zero degrees all day, and is expected to drop to minus 21 degrees tonight. These are big records for Denver. They are even bigger troubles for our home which is not insulated, and has 107 year old windows.

An excerpt from today's news: "Denver only reached -1 degree for the high temperature Tuesday afternoon. This is the first time since Jan. 13, 1997 that the high temperature in Denver has failed to go above zero"

The funny part- school was cancelled today and will be cancelled again tomorrow due to cold. Also, my photography class for tonight was cancelled due to cold. LOL!! Jeff and I are just kicking back and laughing about the reaction to zero degree temperatures. What if they called OFF school in Wisconsin or North Dakota every time the temperature was below zero??? We sure would not have gotten a very good education, I would say....

You have got to be kidding me, right? Some trash collectors found a naked 2 year old along side the road, he is OK~ but WOW! This was in Conifer, a town up into the mountains. Oh my....
